South Indian Style Homemade kuzhambu milagai thool is also called as All Purpose Chilli Powder. It is used to make variety of Veg and Non-Veg kuzhambu, gravies and masala paste. This powder helps to enjoy spicy recipes without causing any harm to our digestive system. It is always good to use this powder in our daily cooking rather than the raw red chilli powder as it causes multiple digestive related problems when taken on a regularly basis in our food.

Today let’s see how to make South Indian Style Homemade Chilli Powder.

Ingredients

  • Red Chilli – 500g
  • Coriander seeds – 500g
  • Red Gram (Toor Dal) – 100g
  • Peppercorns – 50g
  • Cumin Seeds – 50g
  • Fennel Seeds- 50g
  • Mustard – 25g
  • Fenugreek Seeds – 25g
  • Cloves – 2
  • Cinnamon – 2
  • Raw Rice – 100g
  • Dried Curry leaves – 1 cup

Instructions

1First, Keep the red chilli and coriander seeds in sunlight for atleast 5 hours.

 

2Heat an empty pan and roast toor dal for about 1 minute in medium flame.

 

3Then add the mustard seeds, pepper corns, cumin seeds, fennel seeds, fenugreek seeds, cloves and cinnamon to the pan and roast all the above ingredients in medium flame.

 

4Once you get a nice aroma from the above roasted ingredients, shift all the ingredients from the pan to a plate and keep it aside.

 

5Now in the same pan, add raw rice and roast for about a minute. Also add dried curry leaves to the same pan and roast for few seconds and then shift the above ingredients to the plate.

 

6Allow all the above ingredients to cool off and add it to the Red chilli and Coriander seeds.

 

7Finally grind them in mill to get a Homemade Kuzhambu Milagai Thool also called as All purpose chilli powder.

 

8You can use this Homemade Kuzhambu Milagai Thool or Homemade Chilli Powder to make any kind of veg or non-veg kuzhambu varieties,gravies and masala paste.

 

Tips

The Raw rice added to this powder helps you to make nice thick gravy or kuzhambu.

The Curry leaves added gives nice aroma to the powder and also very good for health and digestion.

You can also grind it in mixer but make sure you grind it as a very nice powder.
